Goat Meat (Chevon, Cabrito)
We dam-raise our goats, so they drink milk for at least the first six months of their lives while learning to forage in pastures and woods. Both dams and kids are raised humanely on almost 100% pasture, browse, and hay. They receive occasional grain treats (oats, barley, sunflower seeds--no corn, no soy) during hoof maintenance and the couple of times they break into the milk parlor.
Goats are processed at Trackside Butcher Shoppe in Campbellsburg, KY. This is a USDA inspected facility that is Animal Welfare Approved, and we make sure our animals are treated respectfully until their death. Our beef is grass-fed and grass-finished. We pasture the cattle for the entire growing season, which can be up to 11 months here in Southern Indiana. The goal is to have cattle on pasture year-round using mob grazing, and we are setting up our 40 acres to accomplish this goal in the next 3 years. We supplement with chemical-free hay during the winter. Because we do not "finish" our steers on grain or corn, it will taste different from store-bought beef, so please keep that in mind before placing an order. At times, we'll have individual cuts available, but there's a price break for buying a half or whole animal, and you can have it cut to your specifications. If buying a whole, you have the option of choosing your own butcher. We'll deliver to the processor of your choice (if different from ours) for a nominal fee. Typically, our Dexters are ready to process when they weigh 600 pounds live weight, which translates to ~300 pounds hanging weight and 150-200 pounds of packaged meat (again, depending on cuts chosen, and estimating conservatively). Final cost will be based on live weight taken at the processor on certified scales.
